Gluten-Free Mini Donuts. Enormously Necessary

I’ll make this quick and to the point. Does everything taste better in miniature form? When it comes to pastries, the answer is YES. Cupcakes, mini muffins, MINI DONUTS. You get it. 🍩🍩🍩

My gluten-free mini donut recipe is classically filed under ‘so easy a Caleb could do it’. The ‘trick’ in all of this is just getting the mini donut 🍩 pan, of course. The one I got off of Amazon is linked HERE for your convenience. It’s non-stick and only $12.99. I love making these because it absolutely is a favorite activity of my son Drake’s to help with, and eat! So, not only is my recipe gluten-free, it’s also family-friendly. 😉 ENJOY!

GLUTEN-FREE MINI DONUTS

Makes 24 Mini Donuts

Gluten-Free Mini Donut Recipe – Easy and Delicious!

INGREDIENTS
• 1 Cup Gluten-Free Pancake/Waffle Mix or Gluten-Free all purpose mix: I recommend the one by Full Circle
• 2 Eggs
• 2 Tbsp of melted coconut oil
• 1 Cup of milk, any type. I’ve been using Oat Milk lately and love it.
• 1 Tsp Cinnamon
• 1 Tbsp Cocoa Powder (optional if you want to make these chocolate flavored)

DIRECTIONS
Pre-heat oven to 375 degrees. Combine all ingredients in a mixing bowl and stir until batter becomes runny enough pour and then fill into mini-donut pan. FYI this yields 24 minis, so if you just have one pan that holds 12 then you’ll make/bake two ‘batches’ to use all the batter. Bake for 12-14 minutes max, donuts will ‘rise’ and look like cute little cakes. These can be enjoyed nearly immediately, I let them cool for 2-5 minutes. Psst, this recipe can also be used for regular sized donuts #obvi.

These recipes are fun because you can get creative with them too. Add vanilla or almond extract, or blueberries to mix it up. Add more chocolate than just a tablespoon. Make it your own.
